Brown Vegan

I sip tea, have a strong desire to wander the world, and prefer living through experiences not over consumption-oh, and I eat plants & listen to ratchet music.
Anybody else struggle with eating breakfast? I usually have a couple cups of tea and an apple, but sometimes I don’t even want to do that. I’m working on bringing my daily smoothie back…picked up some spinach, frozen blueberries, bananas & flax milk. What do you usually have for breakfast? Most mornings my boys have cereal, grits or oatmeal. We try to keep out mornings simple. :-)

Upgraded our water station to glass…$20 w/ stand at Bed & Bath. We have some lemon, lime & ginger floating around right now.   This is such a great way to get kids to drink more water.

Made this roasted eggplant with yogurt-tahini sauce and roasted chickpeas tonight. I actually made another dinner (enchiladas) because I didn’t think anyone would eat this. Lol Out of my family of 5: 3 loved it, 1 didn’t, and the 5th one (my picky eater) decided not to try it. I got this recipe from “The Smitten Kitchen” cookbook and veganized it by skipping the meat and using So Delicious Greek style coconut yogurt (I think a soy yogurt would’ve been better) instead of conventional yogurt. What’s on your plate tonight?

Hey! I hope you’re having a great week. :-) I made mejadra for the first time…got the recipe from the “Jerusalem” cookbook. It was okay but I think I used too much allspice. My son, Elijah said I love cooking with “stinky”spices. Lol 
This one has coriander, cumin, turmeric, allspice, cinnamon & black pepper. I will say the leftovers (the fam ate it but didn’t love it) were better…I guess I just needed to let the flavor marinate. Lol

Made the French onion soup using “beef” & “chicken” broth (talked about it a few posts ago), dry red wine, thyme, bay leaf, pepper & lemon juice….topped with a baguette & vegan Swiss cheese. Flavor was awesome & the fam loved it.

Lunch at Panera while I work today…had to cash in that $2 off pick 2. Black bean soup & basic salad with almonds. I can’t wait for them to bring back the spinach power salad (minus the bacon & eggs). I love how they pull out the company book and tell me if there’s dairy, eggs, etc. in their food. I appreciate it. What’s for lunch?
